Ingredients
  

  • ¼ c pumpkin puree canned or homemade
  • 1 Tbsp cocoa powder
  • 3-4 packets no-calorie sweetener to taste *SEE NOTES
  • ¼ tsp cinnamon
  • pinch of salt do not omit
  • 1 c unsweetened vanilla almond milk

Instructions
 

Fork method

  • In the bottom of your mug, mix the first 5 ingredients plus 1 Tbsp of the almond milk with a fork until smooth.
  • Add ¼ of the remaining almond milk and mix again until smooth.
  • Add the rest of the almond milk, stir until smooth, and microwave for 1-1½ minutes. Give it a final stir and enjoy!

Blender method

  • Whiz all ingredients in a blender, transfer to a mug, and microwave 1-2 minutes until hot.

Notes

*UPDATE MARCH 2023: I used to use Truvia in this recipe. However, given the recent study linking erythritol (found in Truvia) to increased clotting risk, I've deleted Truvia from the recipe. Until we learn more, I suggest avoiding products containing erythritol. I now use 8-10 drops of this Lakanto monk fruit extract.
-I like Almond Breeze (30 calories per cup, what I used for this recipe) or low-fat, unsweetened coconut milk (Almond Breeze Coconut flavor or Coconut Silk, each with 45 calories per cup)
-A heaping teaspoon of So Delicious CocoWhip Light swirled on top dresses up this hot cocoa for just 10 more calories. Or, steam a little almond milk in the microwave and swirl some of the resulting foam on top, as I did in the pictures.
