Some of my husband’s extended family members are coming over for dinner soon, and as you know from my 10 healthy vegan potluck recipes post, I get anxious cooking for omnivores.
I mean, when people are used to “regular” food with all its added fat and salt and sugar, I know I have to bring my plant-based A-game to create a meal they’ll love. What’s more, due to allergies and sensitivities, I can’t use two of my favorite plant-based ingredients: ripe fruit and tree nuts. Yikes!
Oh, and two kids will be coming. While these two are lovely and a lot of fun, I know for a fact that kids don’t pull any punches if they don’t like something. So I’m sweating it a little over here.
Luckily, I came up with a menu I think everyone will love. It’s gluten free, nut-free, fruit-free, and vegan. (Whew!) I’ll post the menu with recipe links, including how each recipe went over, after the dinner. In the meantime, I’m testing recipes to make sure I know what I’m doing and get the timing right.
Of course, since this is me, I’m starting with dessert. However, finding a kid-friendly, low-fat, gluten-free, nut-free, fruit-free vegan dessert was a challenge! Luckily, I found a winner on one of my new favorite blogs, The Vegan 8.

Written by Brandi, The Vegan 8 features oil-free vegan recipes with 8 ingredients or less. What’s more, most of Brandi’s recipes are gluten-free and made with healthy whole-food ingredients. Needless to say, I think you’ll love her blog!
While I’ve bookmarked recipes from The Vegan 8 before, this is the first one I’ve actually made—and boy am I glad that I did.
These tasty, fudgy brownies are low fat (just 2.6 g fat per brownie), nut free, gluten free, and completely delicious. Best of all, I think they’ll pass the kid test!
Just be sure to stick to the lower end of the cooking time to make sure these brownies have a nice, fudgy texture. I cooked mine a smidge too long, but even so, they were still delicious—and ridiculously easy to make.

Lee – Thanks for sharing this post with us. We just discovered that Emily (age 3) has celiac disease so we’re transitioning into a gluten-free household. In hoping that she’ll love these treats!

Hi Michelle, I’m so sorry to hear that Emily has celiac disease, but there are so many great resources out there! And I’m sure she’ll be feeling much better on a gluten-free diet. Kudos to you also for making your entire house gluten-free, too–it’s nearly impossible to avoid cross-contamination if you don’t.
Anyhow, here’s a cookbook with kid-friendly GF recipes: Gluten-Free and Vegan for the Whole Family. I have a copy, and even if you’re not vegan, I think you all will really enjoy the recipes. Also, for eating out, California Pizza Kitchen is a great choice. ALL of their restaurants are certified by the Gluten Intolerance Group as celiac-safe. I may actually do an upcoming post on resources for celiac disease, but until then, please feel free to email me if you have any questions! We have celiac in my family, so I’ve done a ton of research. (And I’m guessing you’re in the midst of your own research right now.)

MUG CAKES are the BEST. They taste decadent (warm cake!), but like you, I try to make mine healthy. Plus they require zero patience, which is perfect when you need a dessert fix stat, amirite? 😉

*whew* I’m with ‘ya! Whenever I have non-vegans come over, I really want to make something they will like that is healthy. I don’t have kids thrown in the mix normally – so you’re a superstar finding and making something so delicious! Totally going to check out the recipe right now!
