Dinner tonight was a snap to put together (and thank goodness, because I didn’t have the time–or patience–for anything complicated!) I made Lindsay Nixon’s “Cauliflower-Pumpkin Curry” recipe from her awesome cookbook, Everyday Happy Herbivore. It turned out delightfully, as always, and better yet, it really does take only 30 minutes to make. Serve it with quinoa and top with toasted pecans, raisins, and fresh cilantro for a restaurant-worthy dish you can easily whip up on a weeknight.
And the salad? Even easier, and so, so good! Just nestle some red pear slices on a bed of baby arugula, add a few walnuts, and drizzle with sweet fig vincotto vinegar. I believe the technical term for the result is “major yum.”
