I’d hoped that the spinach salad I’d slated for today would somehow be a darker, more luxurious shade of green, but I’m still counting it as dark green for the purposes of Eat the Veggie Rainbow week.
Since there’s no recipe (unless you count pouring dressing on greens a recipe), I’ll share one of my favorite veggie-enhancing products instead: Briannas Poppy Seed Dressing.
No, Briannas didn’t pay me to endorse their dressing or send me any free samples (would that Veggie Quest was popular enough to have companies trying to woo me with freebies!). I just really love this stuff. It’s ridiculously good on baby spinach, either alone or paired with chopped sweet onion, croutons, or even a handful of (gasp!) crumbled bacon.
Why the peach on the bottle, you ask? No idea. The dressing contains no peaches whatsoever, and despite the helpful serving suggestion, I don’t think it tastes very good on fresh peaches. But it sure does make for a pretty label!
Anyhow, since I’m always looking for new ways to make vegetables delicious, I have a question for you: what’s your favorite salad dressing? And what kind of greens do you put it on?
